Broccoli Bites

I'm convinced Tucker will eat anything if it's shaped like a dinosaur. I saw these at Whole Foods when Tucker was tiny and just had to try them.  I mean its broccoli shaped like dinosaurs. These have got to be one of the easiest side dishes to cook when you are traveling. "Dr. Praeger’s philosophy is that healthy food should actually taste good, especially if you don’t let artificial ingredients, colors and fillers get in the way." (quote found on Dr. Praeger's website) They are a little pricey, around $5 for the box, but the convenience of having a quick fun shaped veggie side, that's easy to heat on those days when you have no time, some days it's worth it. If you have a little (or big one) that won't eat veggies, try slipping them one of these, they smell exactly like french fries or tater tots when they come out of the oven, making it very easy to trick picky eaters. Got a picky eater, no time and need a veggie, never fear because, where there's a meal, there's a way!
There is no added junk and very few ingredients (you can see their food rating on fooducate here). Dr. Praeger's says "these all-natural, bite size veggie pancakes come in fun-shaped broccoli, potato, sweet potato and spinach varieties. Parents pressed for time can pop them in the oven for a quick and nutrient-rich snack perfect for fueling kids brains and bodies for afterschool sports." Just place on a cookie sheet and bake according to directions. Sometimes I put these in the oven with whatever meal I'm reheating (cottage pie cups, spinach and feta meatballs, etc.) and just let them cook at 350 for 30 minutes, and they turn out just fine. 

I found this suggestion on Dr. Praeger's website and will definitely be trying it soon! "Dress up a breakfast plate by serving scrambled, sunny-side up or omelet style eggs with a side of Broccoli Littles. They're a lot less time-comsuming than homemade hash browns, but contain the same crunchy potato flavor and texture kids clamour for." Brilliant!
