Tricky Chicky Nuggets

Tricky Chicky Nuggets 
  • 1 pound ground chicken
  • ¼  cup pureed butternut squash or carrots
  • 3 large granny smith apples
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • salt and pepper
Honey Mustard Dipping Sauce:
  • 3 teaspoons mustard
  • 2 tablespoons honey

Preheat oven to 350 degrees. Peel apples and grate them over a bowl.

Once you have grated the apple, use a paper towel and squeeze off any excess juice.

What to do with the juice from the apples? Drain it in a cup and give it to someone you love!

In a large mixing bowl combine chicken, grated apple, butternut squash or carrot puree and spices. Bake in a greased mini muffin tin for about 25 minutes until full cooked. Bake in a greased mini muffin tin for about 25 minutes until full cooked.  Whisk mustard and honey together. Serve hot with honey mustard dipping sauce or freeze for later.

Special Note: This is another great recipe that you can replace the mini muffin tin for a fun shaped baking mold. Don’t have any baking molds? Use cookie cutters! Mold the meat mixture using a cookie cutter on a greased cookie sheet. (Don’t bake the cookie cutter.) Bake at 350 degrees for 20 minutes, flipping the nuggets after the first 10 minutes.
Reheating Instructions: Preheat oven to 350 degrees. Place chicken nuggets on a greased cookie sheet. Bake for 20-25 minutes or until warm. You can also microwave on a microwave safe dish for 30 seconds per side. (Reheating time varies based on microwave wattage).

What's so "tricky" about this "chicky"?

Just call me Keleigh the magician because I can make these chicken nuggets disappear. Using my 4 "magic" spices; onion powder, paprika, salt and pepper I can make almost anything taste like a chicken nugget, fooling the pickiest of eater, pretty good trick huh? To add extra pizzaz, instead of typical ketchup me and my trusty assistant (Tucker) whip up our own honey mustard dipping sauce. Did I mention there is a serving of fruit AND veggies hidden in these guys? No sleight of hand here!
