Dinosaur Balls

Dinosaur Balls (Spinach and Kale Bites)
  • One box frozen spinach (defrosted in fridge overnight)
  • 1 bunch fresh kale
  • 1 large OR 2 small potatos
  • 1 egg
  • 1/4 cup grated parmesan cheese
  • 1/4 cup shredded parmesan cheese
  • 1/4 cup sour cream
  • 2 tablespoons butter
  • salt and pepper
  • 1 teaspoon onion powder
  • 1/2 teasoon paprika
  • 1 teaspoon garlic powder


Preheat oven to 350. Wrap potato in foil and place in the oven for 30 minutes or until tender. While potato cooks chop fresh kale and boil in a stock pot for 15 minutes. 
Drain kale and chop finely in a food processor. Open defrosted frozen spinach and remove excess water by squeezing with a paper towel. 
Mash potatoes using potato masher and mix all ingredients with exception of shredded parmesan cheese. 
Form balls and place in mini muffin tin. Top with shredded parmesan cheese and bake on 350 for 25 minutes. 

Keleigh Tries Kale for the First Time!

My boys suprised me this Mother's Day and submitted this recipe to the Raleigh News and Observer. 
Tucker loves the story of Timmy the dinosaur, everytime we eat these I have to tell him about ole' Timmy and how his diligent mother would gather the leaves of the tall trees and make the dino nuggets for him. I'm serious people, if you tell an interesting story, kids will try anything.  Scared of kale or anything green?  Well, where there's a meal, there's a way.
