Beat the Heat with this Frozen Treat! (no need to cheat, this one is healthy to eat!)

Dark Chocolate Covered Banana and Almond Butter Stars
  • 2-3 ripe bananas
  • 1/2 cup almond butter
  • dash of sea salt
  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil
Directions:

Blend bananas with almond butter and salt.
Pour into a silocone mold, (any shape will do). Cover with foil and place flat in the freezer. For best results freeze overnight.
Melt chocolate with coconut oil. 
Stir chocolate until smooth.
Once banana and almond mixture has frozen gentle remove from the mold. 
Dip stars in chocolate. Drizzle with chocolate to make sure stars are evenly covered. Cover and return to the freezer to harden 
Every now and then, Joe will go completely Paleo.  Bless his heart, the hardest part is not being able to have a sweet treat now and then.  Taking pity on my poor husband, I did some research and came up with a Paleo-friendly dessert that he can eat, and would also taste amazing.  These are like Paleo Klondike Bars.  Tucker has no idea he is eating something healthy when he gets one for his dessert.  Need something to calm a raging sweet tooth craving, but wont have you busting the seam on your pants, where there's a meal, there's a way!

Its like if a Reese's Cup and a Klondike Bar had a Paleo Baby. They'd be perfect at the Lake!:)
