Quin"WOW" and Superb Herb Chicken

Quin”WOW” and Superb Herb Chicken 
  • 1 pound of chicken tenderloins
  • ½ cup lemon juice
  • ¼ cup balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ tablespoon dried or fresh basil
  • ¼ teaspoon dried or fresh thyme
  • 1 teaspoon dried or fresh rosemary
  • ½ teaspoon organic raw sugar
  • 1 tablespoon balsamic vinegar glaze
  • ½ tablespoon extra virgin olive oil
  • salt and pepper
  • ½ pound fresh green beans
  • 1 cup uncooked quinoa
  • 2 cups chicken broth
  • 1 tablespoon butter

Preheat oven to 350 degrees. Remove any excess fat and cut chicken into small bite sized pieces and place in a greased baking dish. 
In a measuring cup combine lemon juice, balsamic vinegar, herbs, sugar, balsamic vinegar glaze, extra virgin olive oil, salt and pepper. Whisk to combine all ingredients.  
Pour sauce over chicken and stir, making sure all chicken has been fully coated. Cover with foil and bake for 60 minutes or until chicken is extremely tender.
While the chicken bakes, place a cup of quinoa in a small saucepan with chicken broth and butter. For added flavor, add ½ teaspoon garlic powder, ½ teaspoon onion powder, ½ teaspoon paprika, salt and pepper. Bring to a boil over medium heat. Once quinoa boils, cover and reduce heat to low and cook covered for 20-25 minutes or until quinoa is tender and has absorbed all the liquid.
When chicken has 10-15 minutes left to cook, place green beans on top of the chicken, and recover with foil, no need to stir (the green beans will cook from the steam of the chicken and sauce adding great flavor).  
Serve chicken and green beans on a bed of quinoa and enjoy, or freeze for later.

Special Note: Not a fan of quinoa? A great way to ease your taste buds into liking this healthy super food is cooking it with wild rice. Instead of using 1 cup quinoa, try ½ cup quinoa and ½ cup wild rice and cook the same way listed above.  This dish can easily be cooked in a crockpot as well. Place cut chicken and sauce in a crockpot and cook on low for 6 hours (or high for 4 hours).
Reheating Instructions: Let frozen herb chicken thaw overnight in the refrigerator.  Preheat oven to 350 degrees. In a greased baking dish bake thawed chicken in oven for 20-30 minutes or until warm. . You can also microwave in a microwave safe bowl. Reheat thawed chicken for about 2 minutes (reheating time varies based on microwave wattage), and place on a fresh batch of quinoa and serve. 

Keleigh Eats A Green Bean

I came up with this totally by accident. I was in High Point visiting my parents and me and my sister wanted to make some baked chicken, and mom had no sauce. So, I got creative, and vola! This low calorie, high flavor calssic was born (I say classic because we eat this at our house at least once a week). Next time you don't have an ingredient you want, get creative, because where there's a meal, there's a way!
