Chicken and Peppers Lettuce Cups

Chicken and Pepper Lettuce Cups (Using Bilinski's Chicken Sausage)
  • 2 Bilinskis Chicken Sausage (our favorites are Spinach and Feta, Apple Chardonnay, and Sun Dried Tomato and Basil)
  • 1/2 cup cut red, yellow and green bell peppers (we buy ours frozen at Trader Joe's)
  • 1 1/2 tablespoons soy sauce
  • salt and pepper
  • 2-4 Romain Lettuce Leaves

Cut chicken sausage in half length wise the cut into small bite size pieces. Saute' with peppers and soy sauce on medium/low heat for roughly 10 minutes, or until peppers are soft. 
Serve in Romain lettuce leaves cups.

A Note from Chef Joe...

So Keleigh and Tucker are going on a small vacation and I'm left alone to fend for myself.  Whatever is a man to do?  Keleigh's number one concern when she leaves me alone is "What will you eat?"  To keep things simple for a novice like myself, Keleigh came up with this great recipe that takes very little preperation, and can be done in less than 20 minutes.  She came up with this recipe while I was doing the Paleo diet earlier this year and its my go to meal when I'm left alone at the house.  Its a healthy option and one that any amateur cook can easily make in the kitchen.  Left alone for a couple of days, or simply scared of too many ingredients, where theres a meal, theres a way!

Looks delicious. I can't wait to try this. Since Tim and I grew our own peppers this year (we also cut up and froze our peppers) this will be an excellent way to use up some of our supply.
