Cake Camp

Is the weather not cooperating one day this summer and the kids can't play outside? Try having a cake camp! What in the world is a cake camp? Well, let me tell you!
First gather up some friends (in our case our wonderful neighbors Owen and Ryan) and go gather your supplies. For this particular cake camp we wanted to test Cake Boss' cake mix vs. Duff cake mixes. I also let the boys pick out some fondant for one of our cakes as well as some frosting. 
Once we picked our mixes we had to figure out how to decorate them. All the boys wanted strawberries on one cake. So we descided to do a Straberry Chiffon cake. We baked the cakes in 2, 9 inch round pans. Then we made a homemade frosting and strawberry puree. 
Cream Cheese Frosting
  • 1/2 block of low fat cream cheese frosting
  • 4 tablespoons room temperature butter
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
Blend all ingredients together until smooth.
Strawberry Puree
  • 6-10 strawberries
  • 2 tablespoons sugar
  • 1 tablespoon water
In a small sauce pan place strawberries, sugar and water and bring to a boil over medium heat. Once strawberries have softned (5-6 minutes) , puree. 
In between the cake layers we frosted with 1/2 container of lite cool whip then our strawberry puree.  Then we frosted the outside with our homemade frosting. Then the boys wanted to top the cake with sliced strawberries. 
Next up, Duff's Tie Dye cake. Each boy was responsible for mixing 2 colors of the cake batter. This cake mix was COOL! The boys LOVED all the birght colors and we had to pour each color in the pan on top of one another to make a cool rainbow pattern. While our cake baked the boys rolled out their fondant and cut some shapes out (most of which we just covered with the blob of green fondant). 
Isn't it beautiful? We topped this cake with Funfettie Orange Frosting (vanilla flavored, just orange in color). 
Finally, we had to taste our hard work! The winner we all agreed on was......Duff's Tie Dye Cake! It was super soft and moist, with a hint of almond flavor. Plus, its just so pretty! Our frosting on the Strawberry Chiffon cake was amazing as well as the strawberry puree. The cake was a little flat on flavor and very dense. Not bad, just not as good as the tie-dye. So, wondering what to do the next rainy day with your kiddos? Try having a cake camp! It's a fun and tasty way to "eat up" an afternoon! On the next day you can't get out and play just remember, where there's a meal, there's a way!
