Tira"ME"sue (my version of Tiramisu)

  • 2 packages of lady fingers
  • 1 cup coffee
  • 1/2 cup Kahlua
  • 2-8 ounce containers of mascarpone cheese
  • 12 ounces light cool whip
  • 1/2 cup powdered sugar
  • 2 teaspoons vanilla
  • cocoa powder (for dusting)
  • 1 bar dark chocolate

Beat together mascarpone cheese, cool whip, powdered sugar and vanilla until smooth. In a large shallow bowl mix coffee and kahlua. Dip lady fingers in coffee mixture quickly (if you leave it too long the lady finger will disintegrate.
Place soaked lady finger in the serving vessal of your choice. (I like to serve mine in individual sized cups for easy serving and clean up). 
Place filling in a gallon sized ziplock bag and cut one corner off. This will allow you to easy pipe the filling into the cups.
Fill cup with alternating layers of coffee soaked lady fingers and filling. 
Top with cocoa powder and grated dark chocolate. Refridgerate overnight or at least 6 hours before serving. 

I make it just for my Mom!

I am going to be perfectly honest. Tiramisu isn't my favorite. (AH!) But, it is my mom's absolute favorite. Some time ago I toyed around with the recipe. I know there are strong coffee flavors and some kind of liqueur so that's what I used. Well, the recipe above is now her favorite version of her favorite dessert. For every birthday, Mother's Day or just a random weekday, she requests my tiramisu. Even if you don't like a food, play around with the flavors and see what you can create, (it could end up being your mom's favorite) because, where there's a meal, there's a way!
