Caramel Pecan Bars

For the crust
  • 1.5 cups pecans
  • ¾ cup almond flour/meal
  • ¼ cup Gold Label Virgin Coconut Oil, melted
  • 1 egg, whisked
  • 1 tablespoon Raw Honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • pinch of salt

For the caramel

  • 12-14 medjool dates, pitted and soaked in water for an hour
  • 5-6 tablespoons canned coconut milk
  • 3 tablespoons water
  • 1 teaspoon vanilla extract
  • pinch of salt

Back around Christmas time my sister challenged Joe and my dad to eat completely Paleo for 1 month. This of course meant I would be making paleo meals for 1 month, me the girl who hates fruits and vegetables. What is a girl to do?? Search Pinterest of course! That's where I found this recipe from PaleOMG. Caramel Pecan Bars, that are paleo? How? I honestly made these just to prove to myself that caramel paleo bars would be nasty. Well people, I can admit when I am wrong, and boy oh boy was I wrong. These things were AMAZING! Like, bake and eat it, whether you're a paleo caveman or not! The nutty cake tastes almost like a really delicious crust and the frosting?! Life Changing! Doing the Paleo Diet but craving a big ole' piece of cake?

This frosting is so good I've tried it out on regular cake, and it's still amazing (caramel frosting recipe) ! After trying this I've used dates soaked in vanilla to sweeten cakes, sweet potato casseroles and more! It's a supremely tasty alternative to sugar! I've even fooled picky kids into thinking it was just a regular frosting. If it can fool kids (and me) believe me, it's great!
