Apple Sandwiches and Overnight Oats

Week One is DONE!

Day 4!

Tucker couldn't quite get his thumb to cooperate, so he just descided to cover it up to show 4 fingers. I'm pretty sure he's a creative genius (not biased or anything). 

Friday Menu

Apple Sandwich
  • 1 large apple (I used gala)
  • 1-2 tablespoons almond butter
  • 1 teaspoon raw local honey
  • 2 tablespoons lemon juice
  • sprinkle of cinnamon


Wash and core an apple. Dip in lemon juice and sprinkle with cinnamon. Top with almond butter and honey. Serve like a sandwich. 

*Note: Apple sandwich is paleo and to make Vegan, substitute agave nector for honey(or just omit, its still delicious). 
Overnight Peach Cobbler Oats
  • 1/4 peach peeled and chopped
  • 1/2 cup plain greek yogurt
  • 3 tablespoons rolled oats
  • 1 teaspoon chia seeds
  • 1/2 teaspoon vanilla bean paste (or non alcoholic vanilla extract)
  • 1 teaspoon raw local honey
  • sprinkle of cinnamon

Mix all ingredients and refridgerate overnight (this allows the oats to soften and flavors to develop).

Packing school lunches shouldn't be something you dread, just plan ahead!

What's the best advice I can give you for packing school lunches (or any meal really)? PLAN AHEAD! Saturday or Sunday evenings I try to sit down and plan out our breakfast, lunch and dinners for the next week. I take into account if we are eating out any or traveling, and our schedule to accomodate cooking times etc. Then everything just falls into place. I know what meals we will  likely have leftovers from, so voila, theres lunch! Meal planning makes grocery store runs so much easier, and often cheaper! How? Well, how many times have you been shopping and thought, "Oh this really random item looks tasty and I'll figure out something good to eat with it", then 2 years later you find it lurking in the back of your pantry (don't lie, we've all been there). With meal planning you know EXACTLY what you need to buy to feed your family for the week, cutting down on those impulse buys. Theres also less stress! I am NOT a morning person. I can stay up with you until 2-3 in the morning, but waking up at 7:30 and getting Tucker dressed, fed and out the door is a CHALLENGE! With meal planning however, there's really no work when it comes to packing his lunch in the morning, its all been done! Tired of stressing over what to randomly cram in your childs lunch at 7:55 in the morning when you have to be at school at 8? Stop, try meal planning and relax, because where there's a meal, there's a way!
