Make a Date with Oatmeal!

Vanilla Date Oatmeal
  • 6 Medjool Dates
  • 1 cup water
  • 1/2 tablespoon plus 1 tablespoon vanilla extract
  • 1/2 tablespoon coconut oil
  • 1/2 teaspoon salt
  • 1 cup rolled oats or Bob's Red Mill Steel Cut Oats
  • 2 tablespoons chopped pecans (optional)
Date Paste Directions:

Soak 6 Medjool Dates in 1 cup water and 1 tablespoon vanilla extract for 20 minutes. 
Reserve 1 tablespoon of the liquid the dates soaked in and combine with dates in a food processor to make a date paste. 

Note: You can make this the night before, saving you time in the morning!
Oatmeal Directions

Combine 2 cups water, ½ tablespoon coconut oil, ½ teaspoon salt and ½ tablespoon vanilla in a saucepan and bring to a boil. Add 1 cup of Bob’s Red Mill Steel Cut Oats and cook for 7 minutes. When oatmeal has 1 minute left, mix in the date paste.
*Optional – add 2 tablespoons of chopped pecans. 

Let oatmeal sit at room temperature for 2 minutes, then top with vanilla bean paste and serve warm.

Fan of packaged oatmeal? Do you know that if you bought it in bulk not only would you save more, but it tastes a WHOLE lot better, oh and it's way better for you! I have completely, irrevocably, madly, deeply fallen in love with dates. They add natural sweetness to anything and when they are soaked in vanilla, wow (why isn't there a vanilla date candle out there somewhere??). So what do you get when you combine vanilla soaked dates and creamy nutty oatmeal, breakfast perfection! Stuck in an oatmeal rut and don't know the way out? Where there's a meal, there's a way!

Ive never tasted a date before! One soaked in vanilla sounds like a good place to start!
