Sweet Debbie's Fudgy-Fig-A-Mama-Jig Bars

Fudgy Fig-A-Mama-Jig Bars
  • Sheet of Parchment paper slightly larger than 15 x 10 inches
  • 12 dried Calimyrna figs, de-stemmed and cut into 1/2 inch pieces
  • 3 tablespoons water
  • 4 cups gluten-free oats
  • 1 1/2 cups all-purpose gluten free flour*
  • 3/4 cup raw pumpkin seeds, roughly chopped
  • 1/3 cup cacao powder
  • 1 teaspoon guar gum
  • 1/4 teaspoon fine sea salt
  • 1 cup coconut oil
  • 1/2 cup coconut nectar
  • 1/4 teaspoon stevia powder
  1. Preheat oven to 300. Line a 15x10 inch jelly roll pan with the parchment paper, with a little extra over the sides.
  2. Place figs and water in a food processor or blender and puree. 
  3. Mix together the oats, flour, pumpkin seeds, cacao powder, guar gum and salt in a large bowl.
  4. Microwave the coconut oil and coconut nectar in a 2-cups measuring cup for 60 seconds. Add stevia and stir to combine. Pour the coconut oil mixture into the oats mixture. Fold in the fig puree.
  5. Spoon the batter into the prepared pan and smooth it into the corners and on top with a wet baking spatula to cover the pan evenly.
  6. Bake for 25 to 30 minutes, or until the oats are dark golden brown and look dry. Rotate the pan halfway through baking.
  7. Transfer the pan from the oven to a wire rack and let sit for at least 1 hour.
  8. Transfer the parchment paper to a cutting board and cut into 25 bars.
Wrap each bar individually in parchment paper or bakery tissue paper, place in a sealable plastic bag and keep frozen until ready to pack or eat.

*Debbie's All-Purpose Gluten-Free Flour Mix 
  • 1 cup tapioca flour
  • 3/4 cup sorghum flour
  • 3/4 cup millet flour
  • 1/4 cup ivory teff flour
  • 1/4 cup quinoa flour

Vegan Cookies. Don't lie, the first thought when you hear that phrase is cardboard. I mean if you take away the gluten, eggs, dairy, wheat and sugar what are you left with, air?? Sweet Debbie proves that not only do vegan baked goods not taste like cardboard, they can actually taste better than their glutenful, dairyful and sugarful counterparts! Her Fudgy-Fig-A-Mama-Jig Bars drive this point home. I didn't have the highest of hopes taste wise for these guys, I mean afterall they are sweetened with figs. Half a pan later, I can safely say they are quite delicious. My batch turned out more of a granola than the aforementioned bars, but who cares, it tasted amazing. Think that vegan means the death of all taste and flavor? Well Debbie Adler proves that where there's a meal, there's a way!
