Paleo Pumpkin Chili

Paleo Pumpkin Chili
  • 1 pound lean ground beef or turkey
  • 1 package of chicken sausage chopped ( I love bilinski's
  • 1 large yellow onion
  • 1 tablespoon extra virgin olive oil
  • 1/2 tablespoon crushed garlic
  • 3 chopped carrots
  • 3 bell peppers chopped (I used green, yellow and red)
  • 3 celery stalks chopped
  • 3  jalapeno peppers chopped
  • 2-28 oz. cans diced tomatos
  • 1 1/2 cups chicken or vegetable broth
  • 1/2 cup apple cider vinagar
  • 1 15 oz. can pumpkin
  • 1 1/2 teaspoons cumin
  • 1 1/2 teaspoons onion powder
  • 1 1/4 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • salt and pepper

In a large skillet, combine olive oil and diced yellow onion over medium heat. Once onions have browned slightly, add ground beef, crushed garlic, 1/2 teaspoon cumin, 1/4 teaspoon paprika, 1/4 teaspoon garlic powder, 1/2 teaspoon chili powder, 1/2 teaspoon onion powder, salt and pepper. 

Note: Hate crying when you chop onions? If you put your onion in the refridgerator first you won't cry when you chop!
Transfer browned beef and onions to a crock pot.

Note: Love crock pots, but hate scrubing them? Use Reynolds Crock Pot Liners!
Combine the rest of the ingredients and mix well. Cover and cook on high for 6 hours.

Note: Want extra heat? When chopping your peppers, leave the ribs and seeds. That is where the heat is located!

Pleasant Pumpkin Chili thats Practical Paleo (Perfect!)

This is a recipe I came up with when Joe did a month on the Paleo diet earlier this year. I think he actually prefers this chili anyway because Joe HATES beans (which are against the rules on the paleo diet). The crock pot allows all the flavors to slowly simmer together producing huge flavor. The pumpkin adds thickness and a velvety texture to the chili. Are you paleo or just hate beans, but want a delicious chili? Where there's a meal, there's a way!
