Pumpkin'n Spice's Pumpkin Pie Bites

Pumpkin Pie Bites
  • 1/4 cup pumpkin puree
  • 1/4 cup honey
  • 3/4 cups old-fashioned oats, ground in food processor
  • 1 tablespoon chia seeds
  • 1/2 teaspoon cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup Jiff Whipped Pumpkin Spice Peanut Butter (or regular peanut butter, slightly melted) - see note below

A few months back I joined Tasty Kitchen which was created by Ree Drummond aka The Pioneer Woman.  Tasty Kitchen is "A Happy Cooking Community" where cooks from all over can share their recipes and cooking ideas with interested readers.  Last week as I was researching, cooking and creating everything pumpkin, I decided to take a look at fellow members of Tasty Kitchen and see what they had to offer in the way of pumpkin inspired dishes.  Over the next few days, I will be highlighting a few of my favorite finds.  First up is Gayle, the blogger behind Pumpkin 'n Spice and her Pumpkin Pie Bites.

Gayle considers herself a baker, cooker, writer, and amateur photographer.  Throughout her years of cooking, she has developed a passion for being in the kitchen. Whether it’s whipping up a pound cake, testing out a new chicken dish, or cooking a tried and true favorite, she loves to experiment with food.  She is a self-taught cook that has learned techniques through trial and error as well as cook books and other food blogs.   Seems Gayle and I went to the same cooking school.
