Everybody Wants a Water Buffalo (Sausage)

What? You Haven't Tried One?

For a girl who doesn't venture outside her comfort "tastes" that often, this was something so random, I could not pass it up.  I bought these outside of Williams Sonoma this past weekend and they come from Mulberry Farms in Stuart, VA.  Owners David and Liisa Wallace started their farm in 2009 and needed a niche product to set themselves apart and be successful.  But why Water Buffalo?  "​We chose water buffalo because a small family farm needs a niche product in order to make a living. Water buffalo are similar to cattle in their requirements, but not being highly bred tend to be healthier and live longer."  They aslo say that Water Buffalo meat in healthy because they do not need intensive antibiotic and hormone intervention that is commonplace in beef production.  I can honestly say I was very skeptical of trying Water Buffalo, but after one taste, I was pleasantly surprised and eager to share my find with my family.  The possibilities for using this are endless, like topping my "Nacho" Ordinary Nachos. Who wouldn't want to say they have tried Water Buffalo?  I also got to see their Water Buffalo steaks, and they have virtually zero fat on them.  Mullberry Farms offers a selection of meats, milks and cheeses, all from Water Buffalo!  Tempted to try something exotic?  Step out of your comfort "tastes" because, where there's a meal, there's a way!

I just happen to live here in Stuart, and am good friends with the Wallaces. We love there farm and their house and their lifestyle....and we LOVE the sausages. When we cook with the Wallaces, we do it proper and British and have Bangers and Mash. (sausages, mashed taters and cheese sauce to top everything, including whatever veggies we bring) This is a great review...enjoyed reading!! If you are ever in our neighborhood, stop in and say Hey Yall! :-)
