Sweet Potato Shut Your Mouth Bisque!

​Sweet Potato Shut Your Mouth Bisque 
  • 1 stalk of celery, diced
  • 1/2 onion diced
  • 1/2  cup diced carrots
  • 1 large sized sweet potato, peeled and diced
  • 5 cups chicken broth
  • 1/2 tablespoon crushed garlic
  • 1/2 teaspoon rubbed sage
  • 1/2 teaspoon thyme
  • 1/2 teaspoon dried rosemary (or a couple sprigs fresh rosemary)
  • ¼ teaspoon of nutmeg
  • ¼ teaspoon marjoram leaves
  • 1 bay leaf
  • ¼ teaspoon paprika
  • 1 tablespoon coconut cream
  • salt and pepper

In a large stockpot, combine all ingredients, except coconut cream. Cover and cook on medium/low heat for 30-45 minutes. 
Remove bay leaf (and rosemary springs if used). Add coconut cream to soup and pour in a blender, and blend until smooth.
Top with coconut cream and sprinkle with nutmeg, serve warm. 

Note: This soup freezes very well. Freeze leftover soup in a freezer bag.  To thaw, place in a warm bowl of water. Reheat soup on stovetop until warm.

Vegan? Simply replace chicken broth with vegetable broth!

​How to turn a culinary defeat into a delicious treat!

​I’ve had my fair share of disasters in the kitchen. Once I was boiling potatoes, and I thought I had turned the heat down to simmer, but when I came back later to check on them, I found not potatoes in my pot, but charcoal, yum.  Another epic failure was my tofu, avocado and cauliflower soup. Why? There are no words.

Reason I tell you this, is, no matter how bad, or good of a cook you think you are, disasters are going to happen, and that’s ok! Sometimes they will lead you to the tastiest things you’ve ever made, and sometimes you just figure out that you should never make that again, ever….never ever. Regardless the outcome, you’re learning! My son is learning how to dress himself now, and man, pulling your own sock on, that is probably as hard as disassembling a bomb in his eyes. There have been tears, and frustration, but the other day he got it on all by himself, and gracious, he couldn’t have been more proud! So remember next time you pull on your socks, it wasn’t always that easy, and the same can be said for cooking. The more you do it, the more mistakes you make, the better you eventually will become.

This leads me to my sweet potato shut your mouth bisque. It was a snowy day and Tucker and I wanted grilled cheese and tomato soup, but Joe was doing the paleo diet at the time, so no creamy goodness for him…..but wait, I could attempt to make a homemade soup again? The last time had been a disaster (the afore mentioned tofu, cauliflower and avocado debacle). But I gave it a whirl anyway! This time I had some sweet potatoes, chicken broth, celery, carrots, and onions. Could I make something delicious out of that? Well maybe for Joe, I mean eating Paleo is one step up from eating grass isn’t it? So I got to work, and to my amazement, the smells that started to fill my kitchen were heavenly. So heavenly that I thought, if it smells this good I must try it! And to my complete shock it was delicious! Super smooth and creamy, full of flavor with a hint of nutmeg.  And this is Paleo?!?!?! Hmmm, I thought that gluten free, grain free and dairy free, meant flavor free? But this was full of flavor, vitamins and minerals, and all things healthy.  Consider my world rocked.  So even Paleo, where there’s a meal, there’s a way!
