Banana Pudding Overnight Oats

Banana Pudding Overnight Oats
  • 1/2 cup plain non fat greek yogurt
  • 2 tablespoons local honey
  • 1 teaspoon vanilla
  • 1/4 teaspoon ground cinnamon
  • 1 banana sliced
  • 2 tablespoons rolled oats

In a mixing bowl combine yogurt, honey vanilla, and cinnamon. Place sliced banana at the bottom of your container. 
Spoon half of yogurt onto sliced bananas. 
Top with 1 tablespoon of rolled oats. 
Layer more sliced bananas on oatmeal. 
Spoon the remaining yogurt and oats on top, then sprinkle with cinnamon (optional). Cover and place in the refridgerator overnight.

Nugget's Breakfast Menu

When it comes to meal planning, think of ways you can stretch the ingredients that you buy.  I have a confession.....breakfast is not my favorite meal.  GASP!  Maybe its the fact that I detest waking up in the morning, but breakfast foods have never been my forte.  So when it comes to breakfast at my house, quick and easy is always better.  Then I had an idea of assembling my breakfast the night before.  What's better than assembling your breakfast the night before so you can get that extra five minutes of sleep?  Nothing!  Looking at the list of items Nugget bought, I thought we could try something with the greek yogurt.  Nugget and I looked at the fruit she bought and the idea popped into my head, banana pudding!  The oats soften overnight and the flavors really develop.  You wouldn't believe it by tasting it, but there is zero sugar in this breakfast.  In fact, it was so good, Joe and Tucker both ate every bit of their serving at breakfast and it required no assembly in the morning!  Plus, I got to sleep in an extra 15 minutes!  Rather you're a night owl or an early bird, where there's a meal, there's a way!
