Are You Ready For Some Sausage Balls?

Skinny Sausage Balls

To make your own sausage:
  • 1 Pound Ground Turkey (I used 7% Fat)
  • 1/4 teaspoon ground cloves
  • 1 teaspoon sage
  • 1/4 teaspoon marjoram
  • 1 teaspoon crushed rosemary
  • 1 clove grated garlic
  • 1 tablespoon grated onion
  • 1/4 teaspoon onion powder
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon thyme
  • 1/4 teaspoon paprika
  • 1/8 teaspoon ground nutmeg
  • 1/2 tablespoon brown sugar
  • 1/4 teaspoon oregano
  • sprinkle of red pepper flakes
  • salt and pepper
To make the Sausage Balls
  • 1/2 teaspoon baking powder
  • 1 cup pancake mix (I used whole wheat)
  • 3 cups of shredded cheddar cheese
Directions

In a large bowl, combine the ground turkey and spices to make your sausage.  (Don't have time to make your own sausage?  You can buy already made sausage for this recipe) Cover the bowl and place in the fridge for 2 hours.  This allows the flavors to develop.  
 



Preheat oven to 350.  Take the cooled sausage and combine with baking powder, pancake mix and shredded cheese.  Mix well in a stand mixer.



Take the sausage mix and make into sausage balls and place into a mini muffin tin.  Bake for 20 minutes.




After the sausage balls have cooked, let rest for 3-4 minutes and enjoy!

This recipe was actually requested by a friend of ours, Philip, or as Tucker calls him, Phyllis.  Phyllis is the brother of Thomas, who is Tucker's best friend in the world, so Phyllis sits pretty high up on Tucker's list of friends.  Since Christmas, Phyllis has been asking me to make a healthy sausage ball.  What better time than the Super Bowl to make a such a treat.  Being that I made my own sausage, I used a lot of spices to give it a spicy and sweet flavor.  The pancake mix came from a mill near by parents house and it provides a nice doughy texture, all while being clean.   They are not too heavy and leave room for plenty of more "plays" in the kitchen.   Looking to take it deep down the field of deliciousness?  Grab a sausage ball and head for the end zone because, where there's a meal, there's a way!
