Modern Table Meals. 

So who and what is Modern Table Meals?  "We are here to make it easy to bring healthy, exciting, 
and tasty meals to everyday life. Because we know
life gets crazy sometimes and when it does, you
don’t want to compromise."  Moden Table Meals has found a way to make healthy, quick meals that can be prepared in little time to feed your family.  They are a company that loves beans as an ingredient.  Beans are basically a superfood that can be used in various ways to provide a ton of nutrition in every meal they offer.  Their meals come in a variety of flavors to include: Teriyaki White Bean & Broccoli Noodles, Mediterranean Green Lentil Rotini, Italian Red Lentil Penne and Southwest Red Lentil Rotini.  The May Family has tried every flavor but the Southwest Red Lentil Rotini, but never fear that Modern Meal is on the horizon.  

Italian Red Lentil Penne

In my Sneaky Clean blog from a couple weeks ago, I highlighted the Italian Red Lentil Penne that I fed to my dad who was visiting us.  I received this sample from the WOW Summit and wanted to test it on my dad to see if he could ease his way into clean eating.  To add some protein I added a pack of Mild Italian Chicken Sausage from Bilinksi, because the one thing I know about cooking for all the men in my life, they want meat in ALL their dishes.   Once it was all said and done, everyone (including my dad) loved it!  

Mediterranean Green Lentil Rotini

Next up on the Modern Table Meals rotation was the Mediterranean Green Lentil Rotini.  As most everyone has experienced this winter, I was down with a cold and had no energy to prepare dinner.  Luckily, I had some Modern Table Meals that Joe and Tucker could easily prepare for us to eat.

Tucker mixed the sauce with the supplied spices.  He is such a great sous chef.

Under the watchful eye of my husband, Tucker then poured the pasta into the pot of boiling water.  

The verdict?  A super easy meal that was delicious and filling to our entire family.  We enjoyed it with some of my Combine Nuggets.  Even when I'm sick, with the help of Modern Table Meals, my boys can find a way to make a healthy, delicious meal.

​Teriyaki White Bean & Broccoli Noodles

​The latest Modern Table Meal to grace the May Kitchen was the Teriyaki White Bean & Broccoli Noodles.  The perfect protein pairing for this is simple terroyiki chicken.

To make Teriyaki Chicken
Preheat oven to 350. Cube 1 pound chicken breasts in a greased baking dish. Mix 2 tablespoons soy sauce, 2 tablespoons of terriki sauce and 1 teaspoon honey and pour over chicken. Sprinkle with granulared garlic, a sprinkle of ginger, salt and pepper, and bake covered for 45 minutes.

This one was a challenge for me personally.  Why?  The one food that I despise and refuse to even clean up, is broccoli!  The noodles in this recipe are made from broccoli.  How did this one turn out?  Check out the video below to find out!
