Pickeled Pomegranate and Cucumber Salad

Pickled Pomegranate and Cucumber Salad
  • 1 large cucumber cut in half, then sliced
  • 1/4 cup red wine vinegar
  • 2 Tablespoons pomegranete juice
  • 1 clove grated garlic
  • 1/2 teaspoon sugar
  • 1/4 red onion, diced
  • Roughly 1/4 of a pomegranate (or about 1/4 cup pomegranate seeds) 
  • salt and pepper
Directions:

Combine sliced cucumbers, pomegranate seeds (or jewels if your feeling fancy) and diced onions in a air tight storage container. In a measuring cup whisk together vinegar, pomegranate juice, grated garlic, sugar, salt and pepper. 
Pour the vinegar mixture over the cucumbers. Place the lid on the container and give it a shake (to make sure everything is well coated). Place in the refridgerator for at least 6-8 hours (the longer the better!!).

I have never pickled anything in my life, so why not start with pomegranates?! It's sweet, it's tangy, it's got a little heat, it's everything you want in a pickled pomegranate salad! The picture above is from the one and only Nugget. She was one of my taste testers! She liked these bad boys so much, she took them home and ate them for lunch the next day (thus the picture of them with a keyboard). She said that the flavor was even better the next day! There you have it, Nugget tested and approved! Looking for a new side thats quick and easy to make, and will make your taste buds want to dance? Where there's a meal, there's a way!
