Loaded Potato-Less Soup

Loaded Potato-Less Soup
  • 1 head of cauliflower, chopped
  • 1/4 onion
  • 1 sprig fresh rosemary
  • 1 clove of garlic
  • 2-32 oz. containers of chicken broth
  • 1/4 teaspoon paprika
  • salt and pepper
  • 1 1/2 tablespoons greek yogurt
  • 2 tablespoons butter
  • 6 pieces of cooked bacon
  • sprinkle of shredded cheddar cheese (for garnish)
Directions:

Place chopped cauliflower, rosemary, onion, garlic and chicken broth in a stock pot and boil on medium heat until tender. 
Once cauliflower is tender drain over a bowl, to reserve cooking liquid. Remove the rosemary stem then transfer cauliflower, greek yogurt, and butter to a blender pour over enough cooking liquid to puree (roughly about 2 cups). Puree until smooth. Add the 6 pieces of bacon, and pulse a few times, just enough to crumble the bacon. 
Pour soup back into (rinsed) stock pot. Add paprika, salt and pepper. Keep warm over low heat. 
Garnish with cheddar cheese and serve warm. Leftovers may be frozen and reheated at a later time. 

Potato-Less but Flavor-FULL!

OK, so I told yall in my Sweet Potato Shut Your Mouth Bisque post that the last time I attempted a cauliflower soup, it was a complete disaster. Needless to say I was a bit nervous to try again, but I figured bacon covers a multitude of sins. I've made mashed cauliflower before, and I must say it tastes exactly like mashed potatoes (this coming from a picky eater too). Thus on a cold, winter day loaded potato-less soup was born. I mean it tastes exactly like Loaded Potato Soup, but less than half of the calories! Same exact taste, but half the colories? Yea I can get on board with cauliflower.  Could it be possible to make a rich and flavorful loaded potato soup without any potatoes? Where there's a meal, there's a way!
