Getting Picky Eaters to Eat Healthy

Last night, my sister Rachel called me and said "I have three college girls I want to bring over for dinner, but they are picky eaters and don't eat any vegetables, you need to make them something healthy."  I went through my recipe repertoire and thought, if I went to someone else's house for dinner, what would I want to eat?  Knowing that the texture and temperature of foods is a huge variable in the foods I eat, I needed to make something that was pleasing to the eye and the mouth.  That's when I thought of my Handheld Chicken Pies and my Loaded Potato-less Soup.  The potato-less soup, yet again, fooled the pickiest of eaters and was a huge success.  Pureeing the vegetables (I omitted the peas) for the chicken pies creates a smooth texture that is not only pleasing, but hides them in plain site and tastes amazing.  All the nutrition and all the flavor, but presented in a different way, makes all the difference.  I am not the only one who loves these two dishes, see what the girls thought when they tried it.

Picky Eaters Try the Potato-less Soup

When the meal was over, all the soup was gone and each and every plate was clean.  Get a last minute call and have picky eaters coming over for dinner?  Never fear, because these picky eaters just proved that where there's a meal, there's a way!
