Organic Rainbow Sherbet

Cherry Lime Sherbert (adapted from The Pioneer Woman's Cherry Sherbet)
  • 2 bags frozen black cherries (roughly 5 cups)
  • 1 1/2 cup raw sugar
  • zest and juice of 4 limes
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon xantham gum
  • 1/4 teaspoon sea salt
  • 2 1/2 cups whole milk

Boil sugar, lime zest and juice and cherries together. Bring to room temperature. Blend together in blender with vanilla, xantham gum and salt until smooth. Then blend in milk. Refrigerate for about 40 minutes until chilled. ​Pour liquid into ice cream maker and follow manufactures guidelines. Once frozen, transfer to a freezer safe container. Chill for at least an hour. Serve alone of with lemon lime Zevia. 
Lemon Lavender Sherbert
  • 1 cup fresh squeezed lemon juice (about 2 bags)
  • 1/2 cup water
  • 1 cup raw cane sugar
  • 1 tablespoon lemon zest
  • handful fresh lavender
  • 1/2 teaspoon xantham gum
  • 2 cups whole milk
  • 1/4 teaspoon sea salt

Bring lemon juice, lemon zest, water and lavender to a boil over medium heat. 
Transfer to a a large measuring cup, or glass container, with some more fresh lavender, and allow to cool in the refrigerator for about 40 minutes-1 hour. Remove lavender and squeeze all excess liquid. Transfer liquid to a blender and mix with xantham gum, salt and milk and blend until smooth. 
​Pour liquid into ice cream marker and follow manufactures guidelines. Once frozen, transfer to a freezer safe container. Chill for at least an hour. Serve alone or with lemon lime Zevia.

It's unofficially summer! And nothing says summer to me like Sherbert (ok, so I know its technically "Sherbet" but growing up in the south it is only called Sherbert, so there). I went to Whole Foods, picked up my clean soda, but couldn't find any Sherbert. I could find Sorbet-which is mostly fruit and sugar whereas Sherbert is fruit, sugar and milk. Therefore I had but one make my own! In honor of the rainbow sherberts of my youth, I wanted to make a trio of complimentary flavors that would taste delicious with the effervescent twist of Lemon Lime Zevia. This lead me to Cherry Lime, Orange Vanilla, and because I was feeling a little fancy,  Lemon Lavender.  Looking to recreate a summer time classic from your childhood using organic ingredients?
