Tucker's Pea and Bacon Palooza

Tucker's Pea and Bacon Palooza
  • 1 bag organic frozen peas
  • 1 carton of chicken broth
  • 1 tablespoon butter
  • 1 clove garlic
  • 4-6 pieces of cooked bacon
  • 2 tablespoons mascarpone cheese (cream cheese can be substituted)
  • salt and pepper
  • garnish with parmesan cheese  
In a stock pot combine frozen peas, chicken broth, butter and whole clove of garlic. Stir and cook over medium heat until peas are tender about 15-20 minutes. 

Once peas have cooked, drain off chicken broth and place peas in a blender or food processor. Add salt, pepper and mascarpone cheese and blend until smooth. 
Once peas are smooth, add cooked bacon. Gently pulse for a few seconds (you want some chunks of bacon). Transfer to a serving dish. 
Top with parmesan cheese. Serve warm. 

Cooking With Tucker

Tucker informed me that there were no kid's shows about cooking, so he decided to change that. As I have previously said, once a month Tucker is given 100% control over our dinner, meaning he has to pick out, create and cook our dinner. This month's incredible idea was Mashed Bacon and Peas. Ya'll know I hate vegetables, as a matter of fact I don't believe I have ever eaten a pea voluntary, ever. I ate 2 bowls of Tucker's mashed peas. Tucker was inspired by a game called Yummiloo, an App created by Traci Paige Johnson, who I met at the WOW Summit last fall.  She is also the voice behind Blue's Clue's, among other shows.  The app is a this food-based educational game,where kids learn the basics of food identification and nutritional curriculum through fun and dynamic gameplay. Tucker loved the Pea character so much from the app, that he wanted to make something with peas. Thanks to Yummiloo, children everywhere are discovering that where there's a meal, there's a way!
