Brown Sugar Bacon Ice Cream

Brown Sugar Bacon Ice Cream
  • 2 cups half and half
  • 2 cups whole milk
  • 4 egg yolks
  • 1/2 cup brown sugar
  • 2 tablespoons maple syrup
  • 1/2 tablespoon vanilla
​Candied Brown Sugar Bacon
  • 5 pieces of bacon
  • 2 tablespoons brown sugar
Directions:

Evenly rub brown sugar on each side of bacon. Place in a cold oven, then turn to 375 and bake for 10 minutes, or until crispy. Briefly place each piece on a paper towel lined plate, then crumble. 
(Placing bacon in a cold oven makes the bacon crispier.) 

 
In a stock pot combine the half and half and milk and warm over medium low heat. In a separate bowl combine egg yolks, sugar, maple syrup and vanilla. Once milk is steaming and hot (but not boiling) temper you egg and sugar mixture with the hot milk buy pouring a large spoonful of the hot liquid into the separate bowl and whisk briskly. Do this several more times. Then while whisking, pour sugar mixture into the hot milk, and whisk until mixture is thick (about 5 more minutes).  Once you have reached a thick consistency, strain your mixture into a glass measuring cup or bowl. Add the crumbled bacon and refrigerate until cold (at least 6 hours).
Once the ice cream base has chilled, add it to your ice cream maker and follow the manufacturers instructions.  

Cardamom and Vanilla Bean Waffles is Brown Sugar Bacon Ice Cream's Best Friend!

To make Cardamom and vanilla bean waffles mix together you favorite waffle mix. 
Mix in 1 tablespoon vanilla bean paste, 1/2 teaspoon cardamom, 1/4 teaspoon cinnamon, and 1 tablespoon maple syrup. Prepare on your waffle iron following manufacturers directions.

This summer we have been inventing sherbert flavors like lemon lavender and strawberry basil and Tucker has always said, "Mom, let's make bacon!". After picking him up from Vacation Bible School last week with his buddy Owen in tow, I asked what they wanted to do that day. They said, "Let's make bacon ice cream!" That's when I got to thinking, what if you took the sweet and salty bacon ice cream and topped it on a spiced, fresh, hot waffle? You put ice cream in waffle cones do you not? And you top waffles with syrup, butter and many times bacon, so what if all that was in one scoop of ice cream and waffle goodness? Could these silly boy's culinary dream really come true? I was the biggest skeptic, and I am pleased to say that this is delicious! The bacon ice cream, is so delightfully bizarre, it tastes like bacon and sweet brown sugar ice cream. You can taste the smokey notes of the bacon in the same bites as the rich and creamy ice cream. It shouldn't work...but it does. When you pair this with the vanilla and cardamom waffle it is a breakfast-dessert explosion that is simply wonderful.
