But Mom, I only like Waldorf Salad!

Wa"Lolly"dorf Salad
  • 3-4 apples of your choice (Lolly's favorite is honey crisp)
  • 1 1/2 cup craisins
  • 1 cup chopped walnuts
  • 1 cup greek yogurt (we use Fage 0% plain)
  • 1/4 cup lemon juice
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 1/2 tablespoon raw sugar 
Directions:

Chop apples into small bite sized pieces.  Add craisins and walnuts to the apples. Mix yogurt with sugar, cinnamon, nutmeg and lemon juice. Pour yogurt sauce over apples and mix well to combine. 




Refridgerate for 2 hours. Serve cold. 

Lolly and Tucker's Salad of Choice!

Once I tried to get Tucker to eat a salad with his dinner. He looked at it and told me, "Mom, I only like Waldorf Salad!". How does a 3 (now 4) year old know about Waldorf Salad, his Lolly. My mom (Tucker's Lolly) is a huge fan of this salad  (that originated at the Waldorf-Astoria Hotel in NYC by maitre d' Oscar Tschirky sometime between 1893 and 1896). She puts her own spin on the classic using greek yogurt instead of mayo and dried cranberries vs.  grapes. Lolly's waldorf salad is a great breakfast/brunch dish, either as a side, or just eaten by itself.  Want a delicious "salad" for a salad hater? Where there's a meal, there's a way!
