Pesto Pepperoni Pizza Sandwich

Pesto Pepperoni Pizza Sandwich
  • 2 loaves of focaccia bread
  • 1 log of fresh mozzarella cheese
  • 1 jar of pesto
  • 1 package of no-nitrate pepperoni 
  • balsamic drizzle (such as Nonna Pia's Balsamic Reduction) 

Slice your focaccia bread in half. 

Note: Most grocery stores will do this for you. However if you forget, you can do it yourself-I suppose it's the best thing since, well sliced bread. 
Evenly spread pesto on the bottom slice of the focaccia bread and place on a cookie sheet. Keep the top half separate (it will not go in the oven at first). 
Slice and evenly place fresh mozzarella cheese over the focaccia. 
Next, evenly place pepperoni over on top of the cheese. Then place (without the top on) in the oven on low broil for about 3-5 minutes. Then once the cheese has started to melt, place the top on the sandwich and continue to broil for about 2 minutes. 

Note: Somedays I can take amazing photos, and somedays it's rainy outside forcing you to use overhead lights which make your pepperonis oddly shiny, my apologizes.  
Once the cheese has melted, remove the sandwich from the oven and slice into wedges. 
​Finally drizzle with a balsamic reduction. 

Note: I had the privilege to meet Norm and Natasha, creator's of Nonna Pia's at Expo East. Chef Norm knew more about the process of making Balsamic vinegar and balsamic reduction than anyone I have ever spoken with. His passion for his product is contagious. His passion is well deserved because Nonna Pia's Balsamic Reduction is the most flavorful, full-bodied, decadent balsamic glaze I have ever had. I could drink it. I did lick it off the plate, no shame. They aren't sold in the US yet, but should be coming very, very soon!

Taste Tested, and Approved. 

I came up with this sandwich one night when I wasn't in the mood to cook. I stood in the middle of Whole Foods and thought, "What can I make to feed my family, without having to do much of anything." And the Pesto Pepperoni Pizza Sandwich was born. Since that fateful day, this quick classic has become a staple in our house. It is particularly awesome when you are entertaining, not only because of the afore mentioned quick and easy bit, but it can easily be doubled, or even tripled, and fairly inexpensive to make. Tucker even requests it in his lunchbox now (and I pack one for myself too when I eat with him). Not in the mood to cook, but need to feed your family or friends? Hey, where there's a meal, there's a way!
