Pumpkin Funnel Cakes

Pumpkin Funnel Cakes
  • 3 Eggs
  • 1/4 Cup of Brown Sugar
  • 1 1/2 Cups of Milk (I used almond milk and it worked great)
  • 1 Cup of Puree'd Pumpkin
  • 3 2/3 Cups of Flour
  • 1/2 Teaspoon of Salt
  • 2 Teaspoons of Baking Powder
  • 1/2 Teaspoon of Vanilla Extract
  • Sprinkle with Cinnamon and Nutmeg
Powdered Sugar
  • 1/2 Cup of Powdered Sugar
  • Sprinkle of Cinnamon
Combine all your dry ingredients together in a large bowl or stand mixer.  Mix well.  Add all of your wet ingredients and mix until all the ingredients are combined well.
Check your batter for any lumps and make sure all ingredients are mixed thoroughly.
Place a zip loc bag in a large measuring cup and pour the batter into the bag.  This will be used to dispense the batter.
Cut one of the corners of the the zip loc bag to create a piping bag.
In a cast iron skillet, heat up some oil.  (I used grapeseed oil but any high heat oil will work.  I've heard peanut oil is good)  When dispensing the batter, be sure to think spiderweb over cinnamon bun as I learned.  Sorry this one was quite ugly. 
After your funnel cake has browned on one side, flip over and cook on the other side. Once complete, place funnel cake on a plate lined with paper towels to absorb any excess oil.
Sprinkle with your powdered sugar mix and cover with a nice scoop of Haagen-Dazs Dulce de Leche ice cream and enjoy!

The Ultimate Fair Food

Ok I have to be honest, I have a "fair-phobia".  There I said it.  Tons of people, unsavory conditions and trying to keep Tucker contained, it just all freaks me out.  However, my favorite fair food is funnel cake.  What's not to love.  Fried, sweet dough...it's perfection.  Since going to the fair was not going to happen, Tucker and I, with the help of our next door neighbor Owen, decided to make a funnel cake of our own, thus bringing the fair to us! They even took it one step further on the road to deliciousness by requesting pumpkin. Since yesterday was the last day of the state fair here in North Carolina, for all of you who love the fair, you can keep the fair spirit year round.  Top with a scoop of your favorite ice cream and I think you will have a winner!    Hate the fair, but still want some classic fair food year round?  You're in luck because, where there's a meal, there's a way!
