Honey Mustard Ham and Asparagus Chicken Roll Up

Honey Mustard Ham and Asparagus Chicken Roll Up
  • 2 chicken breasts
  • 4 slices of organic ham
  • 6 stalks of asparagus
  • 1/4 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • salt and pepper
  • 1-2 tablespoon(s) grapeseed oil 
For the Honey Mustard Glaze
  • 1 tablespoon stone ground mustard
  • 1 tablespoon local honey

Preheat the oven to 375. Lay chicken breasts on a cutting board and cover with plastic wrap. Pound the meat until thin. 

Sprinkle both sides of chicken with paprika, onion powder, garlic powder, salt and pepper. Place 2 pieces of ham on each chicken breast. 
Place 3 pieces of asparagus on each breast and roll up. 
*Note it rolls better if you start with the asparagus closer to the side you begin to roll- not directly in the center. 
Tie with butcher's twine in 2 places (the top and the bottom) to ensure that the roll stays rolled during the cooking process.
*Note: Don't have butcher's twine? Simply ask the butcher at your grocery store for a small amount, most times this is free of charge!
Heat grapeseed oil over medium high heat in a large skillet. Once the pan is hot, place chicken in the pan, searing each side (about 2 minutes each side).
Mix honey mustard by simply mixing together the honey and mustard. Place seared chicken in a greased baking dish and spoon honey mustard evenly over each piece. Cover with foil and bake for 15-20 minutes or until cooked all the way through. 
Remove from oven and cut butcher's twin from the chicken breasts. 
Slice and serve!

OK, so those time elapse, quick cooking videos are all the rage right now- and for this recipe I wish I had the skills to film one of those (or at least enough hands). This meal looks BEAUTIFUL and has the bonus of being pretty quick and easy to make! Oh and it's Paleo! As you all know, Joe is doing Paleo this month to prepare for our trip to Disney, but I wanted to make him something special- not just a plain ole' baked chicken breast. So, what did he think?
