Cinder Cake

Cinder Cake
  • 1 package of chocolate sandwich cookies (Oreos or Trader Joe's Joe-Joe's)
  • 1/2 gallon of vanilla bean ice cream
  • 2 10oz. containers cool whip topping (or non-gmo Tru Whip)
  • 4-6 tablespoons fudge topping
  • 1 stick melted butter
Directions:

Crush oreos, reserving 4-5 tablespoons. Mix oreos with melted butter. 
Press crust into the bottom of a greased 8X11 pyrex pan. 
Scoop ice cream evenly over the crust (it helps if you let the ice cream soften by sitting on the counter for 10 minutes). 
Drizzle fudge topping over ice cream. 
Evenly spread whipped topping over cake. Top with remaining crushed oreo cookies and freeze for at least 4 hours. Serve cold (obviously). 

My Family's Classics Dessert: The Cinder Cake

Every birthday, sleepover, or cookout growing up had one thing in common- Cinder Cake. My mom's chocolatey, cookie, ice creamy concoction was a favorite among all those who tasted it's frozen goodness.  This past weekend our cul-de-sac hosted our first ever cul-de-sac cookout. What a perfect time to bust out my childhood favorite dessert for the next generation.  Of course it was a hit, just as it has been a hit for the past 30 years. For all your summer parties try whipping up your favorite childhood dessert (if you can't remember, it's ok- use mine). Chances are it tastes just as good as an adult and you will get a free trip down memory lane all because where there's a meal, there's a way!
