Pepperoni Pizza Lasagna

Pepperoni Pizza Lasagna
  • 1 box no boil lasagna sheet pasta
  • 1 jar Marinara sauce ( I used Sneaky Chef Parmesan Romano )
  • 1/2 pound ground turkey sausage
  • 1 16oz. container ricotta cheese
  • 1 egg
  • 2 cloves fresh grated garlic (or 1/2 teaspoon garlic powder)
  • 1/2 tablespoon dried basil (or fresh chopped)
  • sprinkle (less than 1/4 teaspoon) grated nutmeg
  • 3 tablespoons mascarpone cheese
  • 6 tablespoons grated parmesan cheese
  • 1 ball fresh mozzarella cheese
  • 1 package of nitrate free pepperoni (we used Applegate Pepperoni that we found at Target)

Preheat oven to 375 (or the temperature specified on the lasagna box you are using).
Brown sausage and mix with pasta sauce.
Mix ricotta cheese, egg, grated garlic, basil, nutmeg, mascarpone cheese, 4 tablespoons parmesan cheese and salt. 
Grease a 9x11 glass baking dish.
Spoon some sauce onto the bottom of the baking dish.
Layer pasta sheets on top of pasta sauce.
Spoon 1/2 of ricotta cheese mixture over pasta then top with pepperoni slices. 
Top with pasta and more sauce and repeat the process one more time. 
After the last layer, top with remaining pasta sauce, fresh sliced mozzarella cheese, 2 tablespoons grated parmesan cheese, and sliced pepperoni.
Cover with foil and bake for 40 minutes. Remove foil and cook for an additional 7 minutes. 

Pepperoni Pizza Lasagna- Perfection in a Pan!

They say necessity is the mother of all great inventions- I think that goes for dinner too. I had bought the Applegate Pepperoni (that I was SUPER excited to find at Target) to use from my Pesto Pepperoni Pizza Sandwiches, but had lots leftover. So what to do with my precious pepperoni? On the same Target trip I had found Sneaky Chef pasta sauce- with 8 veggies hidden inside-SCORE. My wheels began to turn- pepperoni's best friends are mozzarella cheese and tomato sauce- why not see if they can still get along in a different setting? Good news people- they can! Now back to Sneak Chef Pasta sauce with 8 veggies (sweet potato, zucchini, carrot, celery, squash, cauliflower, red pepper and onion) pureed perfectly inside- this sauce is a picky eaters dream! Next time you have random leftovers laying around, see if they will get along in a new dish because where there's a meal, there's a way!
