Paleo Beef Stew Over Cauliflower Rice

For Beef:
  • 1 1/2 pound beef tips (stew beef)
  • 1 large can (28 oz.) diced tomatoes (organic)
  • 1 cup red wine
  • 2 carrots peeled and diced
  • 1/2 yellow onion diced
  • 1 tablespoon olive oil
  • about 3 ounces bacon fat (fat for one package of bacon cooked)
  • 1 bay leaf
  • 2 cloves grated garlic
  • 1 cup beef (or chicken) broth
  • 1 teaspoon thyme
  • salt and pepper
For Cauliflower Rice
  • 1 package of frozen cauliflower rice from Trader Joe's (or one head of cauliflower pulsed in a food processor until you have the consistency of rice) 
  • 1 tablespoon olive oil
  • 1 clove grated garlic

Melt your bacon fat in a large casserole dish (or frying pan) and add olive oil. Dry your beef tips with a paper towel. Brown the beef a few pieces at a time in the melted bacon fat/olive oil mixture.  As you finish each piece, place in a bowl until all pieces have been sautéed. Once all the beef has been sauted, add your sliced carrots and onions to the bacon fat/olive oil mixture and saute until the onions become translucent.  Once finished, drain off the liquid.
Preheat oven to 300.
Add your carrots and onions, tomatoes, beef broth, red wine, garlic, and seasonings back to the pot and bring to a simmer. Then add your beef and cover. Place in a 300 degree oven for 3 1/2 - 4 hours.

Note: If using a crock pot- cook on low for 6-8 hours

To prepare Cauliflower rice:
Heat olive oil and grated garlic in a sauté pan. Then stir in cauliflower. Cook for about 3-5 minutes or until cauliflower is slightly tender.

Once again I apologize for the lack of decent direction photos-but you see I never really meant to share this recipe. Let me explain. My dear sweet Joe is eating Paleo again. I wanted to make him a play off of Julia Child's Beef Bourguignion  (which is surprisingly  almost paleo- simply take out the flour) but more "stew-y". Therefore I added tomatoes and reduced the wine (and took out the flour of course) and served it over cauliflower rice instead of buttered noodles or whole grain rice. So you see, I didn't think there was anything too special about this dish. That is until I posted the above photo (the best food photo I've taken in months) on Instagram. I got requests to make this recipe public and here we are! I will say that this dish does taste different enough from the original to warrant it's own recipe- so I guess you can say the photo saved the recipe! Wanting to adapt a classic recipe to suite your dietary needs (but think it isn't different enough for it's own post) well thanks to Instagram, where there's a meal, there's a way!
